Kitchen Inspections for Aug. 31-Sept. 12

The following are among the food service establishments inspected from Aug. 30-Sept. 5 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. Hand sink in prep area blocked by small prep table shoved against front of hand sink and clean utensils hanging down in front of hand sink. Slicer with dried food debris from last use, used today to slice onions. Knives stored with food debris on them in container at prep table. Leftover items not date labeled in cooler (pulled pork, chicken salad, chicken wings). Clean utensils hanging on shelf above hand sink in prep area and extending down in front of sink. No quat test strips to monitor strength of sanitizer being used in cloth storage containers, where cloths used to wipe food-contact surfaces are stored between uses. Bartender washing hands in three-compartment sink (warewashing sink) because hand sink in dish area closest to bar is not functioning. Hand sink in dishwashing area for use by dishwasher and bartending staff has no handles on the faucet rendering it nonfunctional.

Employees touching ready-to-eat cooked foods (biscuit, scooping green beans) without a barrier. Sausage, chicken, eggs with temps 98-120 degrees; foods sitting in pans not on temperature control. Reach-in cooler struggling to maintain required temperature. Foods at prep area not at 41 degrees or below. Foods cooling since 9 a.m. still not at 70 degrees. Butter left out by prep area is under tphc; no time recorded, no log for record. Inspection posted from July 16, 2012. Most sinks no longer attached to walls. Warewasher needs cleaning inside and out once each 24 hours. Dust, grease on most surfaces in kitchen. No hot water at front hand sink. Floors, walls ceilings all need much better cleaning, much more often, to prevent insect, rodent attraction.

Person in charge in trailer (cook/manager) didn’t know cook temperatures for types of food being cooked; didn’t know how to set-up three-compartment sink, and was not washing hands properly (without soap) and incorrect sink (rinsing hands in three-compartment sink). Food handler needs training in basic food safety. Food handler not washing hands between changing gloves to work with food. Neither refrigerator unit keeping foods stored (the foods thawing are correct temperature) at or below required temperature of 41 degrees (53, 48, 57 degrees). Food handler (cook/manager) due to heat in trailer from fryers, cooktop appears to be sweating enough to drip, possibly onto food, food-contact surfaces. Home style refrigerator in dry-storage building, behind trailer, is being held closed with a bungee cord. Food handler washing hands in first compartment of three-compartment sink. Many flies inside food trailer.
