Kitchen Inspections for April 30-May 8

The following are among the food service establishments inspected from April 30-May 8 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processes performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Employees eating at prep table in kitchen. No paper towels in dispensers at either hand sink in kitchen at start of inspection. Containers, lexan containers on the shelf (used to store clean and sanitized kitchenware utensils) with dried, wet food debris inside. Can opener blade with buildup of food debris on blade. Kitchenware (lexan containers) stacked wet on drying rack in back of kitchen after cleaning and sanitizing. Chopper with missing plastic pegs on chop surface. Drain board on clean side of three-compartment sink with buildup of food debris. Outsides of plastic lexan containers used to store pizza sauce with buildup of grease/dirt. Floors need better cleaning at floor/wall juncture, accumulation of crumbs, food debris in this area.

No hand soap at hand sink at start of inspection. Chili (98 degrees), cooked onions (104-110 degrees) on table top steam unit and cheese dip (94 degrees) on table steam unit. No food temperature measuring device (thermometer) to monitor the temperatures of foods being hot/cold held. Food handlers without hair restraint. Hot water at hand sink only reaching 85-88 degrees.

Shelves, dish area, under prep tables, walk-in cooler, oven racks, side of fryers, and outside dish machine with food residue.
