Kitchen inspections for April 1-12

The following are among the food service establishments inspected from April 1-12 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Food employee did not wash hands before going from different tasks. Salmon prepped using gloves; gloves discarded and food surfaces touched. Food employee did not wear gloves when handling bread used to absorb grease from the ready-to-eat bacon. Cookies in paper holders stored below cabinet and not stored covered. Teflon pans for omelets stored with food debris; knife, ice cream scoops in dipper wells without water; and some pans had food debris. Dust on ceiling panels and light covers near vents. Shatterproof light bulbs need to replace regular light bulbs in heat lamp at cafe.

Discussed with manager via telephone that employees lacked basic training or food-handling knowledge. Employee rinsed gloves, other employees rinsed hands at non-designated sink by ware washing area. Employee drinking from a bottle. No soap at hand sink in kitchen or ladies room. Most foods in walk-in cooler, freezer, reach-ins, and make line not covered. Soda nozzles have an accumulation. Make-line cooler struggling; food temperatures from 49 to 64 F. Foods on cold bar not as required - temps from 49 to 58 F. No written procedure in place for holding sushi. No dating system in place. Bus pan of tilapia, two bus pans of chopped pork, bus pan of calamari strips, two bus pans of salmon, one bus pan of octopi and 40 pounds of shrimp all thawing at room temperature. Bus pan of frozen octopi in water on floor under hand sink; food stored on floor in cooler and freezer. Sneeze shield on cold bar buffet does extend far enough to protect top shelf of foods. No sign informing customers to use clean plates. Employee not wearing hair restraint. Inspection posted is from April 5, 2010; most recent inspection must be posted as soon as received. Gaskets on walk-in and make line are heavily damaged. Cutting boards need to be resurfaced or replaced. Most sinks not sealed to wall. Gaskets on all coolers have mold, mildew, food debris, water, clean thoroughly and frequently to prevent contamination and insect, rodent attraction. Hood dripping grease. Dumpster open. Trash all over dumpster enclosure. Grease container covered with grease, ground under it covered. Floors, walls and ceilings have grease, food splatters, water. Gaps around vents in ceiling and wall large enough to allow entrance to insects, rodents; back door has a 2-inch gap at the bottom.
