The following are among the food service establishments inspected from Dec. 1-10 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. No foods date-labeled — all PHFs and RTE food must have date labels and be disposed of after maximum of seven days. Thermometers missing, not seen in coolers, freezer. Freezer compressor has leaked all over food. Employee without hair restraint. Cleaning cloths on counters, equipment, etc. Gasket on freezer nearly torn off. No sanitizer test strips. Food debris on gaskets of make line. Cardboard on equipment, shelves. Dumpsters open. A 2-door cooler door gaskets are hanging off door to insure door closure. Hood vents with large accumulation of grease and dust. Dumpster missing drain plug. Floors throughout kitchen and walls in cooler need a thorough cleaning. Floors (linoleum) are ripping. Back screen door is warped and does not shut tight in the doorway. When left open the gap can allow for possible insect, rodent entry. Screening on door is also damaged. Several unlabeled bottles of chemical over 3-comp sink — one is old lemon juice bottle.

Shelves lined with foil with grease, vents in hood with grease accumulation. Moldy cloths in bottom of reach-in cooler in bar need to be removed. Toilets in ladies rest room dirty and needs cleaning. Floors with grease build up especially at fryer. Floor tiles need repaired were broken; clean walls and floors in walk-in coolers and freezers (walls have dust); trash, plates, glasses on floors under dish machine; repair broken floor tiles in walk-in room.

Single serve clean trays on top counter had food residue, debris and single-serve bowels in drawer had food debris. Dumpster leaking and door left open. Cardboard dumpster has no lid and has large holes from damage during pickup. Floors beneath dish washing area and beneath equipment need thorough cleaning all the way to the floor/wall juncture and around all pipes to prevent insect, rodent attraction. Ceiling tiles in storage and office should be replaced and vents’ grates in storage need thorough dusting to prevent possible contamination.
