Kitchen Inspections: Dec. 11-16

The following are among the food service establishments inspected from Dec. 11-31 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.


A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Countertop peeling off at pizza hot-holding counter at buffet line. Gaskets on middle doors of four-door cooler under sandwich make-line unit is ripped. Hand sink under front counter for use by cook area was not stocked with paper towels at start of inspection; hand sinks must be stocked with some sort of hand drying provisions. Chemical sanitizing dishwasher in use, but not dispensing any sanitizer. Bottle was low and appeared to have air through supply tube. Tea urn and coke machine nozzles, as well as ice machine shoot, found with grime and possible mold. Reach-in open top cooler at grill for hamburgers holding potentially hazardous foods inside above 41 degrees; hot dogs 49 F, several containers of sliced cheese 50 F. Sandwich make-line cooler holding foods on top and in drawer below above 41 F, sliced tomatoes 47 F, slaw turkey luncheon meat 50 F. Beans in oven at 94 degrees; after reheating it appears oven was turned off instead of moving beans into hot holding drawer below. Chili cooked in the morning and put into walk-in cooler about 11 a.m. with temperatures taken at 3 p.m. ranging from 83 F to 95 F. Potentially hazardous foods that are cooked and are to be cooled and cold held must be cooled from 135 F to 70 F within two hours, and from 135 F to 41 F within a total of six hours. Food handler with dangling bracelet working the prep line; the only jewelry that can be worn is a plain ring such as a wedding band. Dishwasher not wearing hair restraint. Many wiping cloths found on prep surfaces throughout kitchen, milkshake prep area, soda dispenser at wait area and at sandwich prep unit; cloths being rinsed at dump sink in milkshake area and laid down on prep surface for next use. Between uses, keep cloths submerged in sanitizer solution provided.
