Kitchen inspections Aug. 7-11

The following are among the food service establishments inspected from Aug. 7-11 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 82, Grade: B

Two containers of cheese dip in upright reach-in cooler in deep hotel pans filled 3/4 full cooling from yesterday with temperatures of 44F-47 F. Two large hotel pans of cooked chicken burrito filling filled to 3/4 full cooling in walk-in cooler from yesterday with temperatures of 54-57 F. Most current inspection not posted and inspection that is posted is not where public can view from 1 foot away, posted on side wall at cash register. Sprayer used to fill water glasses in bar has a hook for hanging but is most often being laid in the ice bin at the drink dispenser. Clean drainboard of warewashing machine with accumulation of food debris, inside of dishmachine with accumulation of grease, food debris inside and on spray arm. Grease container on grass and spills have formed a compacted slick in front of the grease container.

Salad King containers stored upright on storage rack with standing water inside. Refurbished top lid of salad plate cooler at cook line damaged and distorted to where hinge collects accumulations of food debris and residues.

Observed food debris along, between blade and removable attachments of ready-to-use deli slicer. Discussed with staff ensuring proper disassembly of slicer when sanitizing after cleaning, before use.

Hardboiled eggs in walk-in cooler have use by date of July 28. Walk-in freezer has water drip/ice condensing along pipe at evaporator fan. Establishment does not cool and reheat foods for later use per CFSM.
