Kitchen Inspections: Aug. 3-6

The following are among the food service establishments inspected from July 23-31 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 91, Grade: A

Coke nozzles and diffusers found with heavy mold and mildew accumulation; clean and sanitize daily. Dirty dishes were being placed on clean side of dish machine drain boards with clean dishes; all dirty dishes must stay on dirty side and only clean on clean side. Vegetable sink being used as a dump sink for drinks from customers; this sink is to be used for vegetable prep and washing only.

Score: 95, Grade: A

Bag of sugar and other items used in food service were stored on the ground in the dry storage room. All food must be stored 6 inches off the ground to prevent contamination. Wooden cutting board in bar cabinet was cracked down the middle. Materials used in food service must be safe, durable, nonabsorbent and able to withstand repeated ware washing. Replace dumpster drain plug. Three ceiling tiles in the equipment room were damaged from leaks; replace damaged ceiling tiles with nonacoustic tiles. Glass light shield in walk-in cooler was shattered and held together with masking tape. All light bulbs used in food service areas must be shatterproof or have adequate protective shielding.

Papa’s Pizza To Go

2703 Dawsonville Highway, Gainesville

Score: 83, Grade: B

Employee beverage (without lid or straw) was stored under the prep table. Food and beverages must only be consumed in designated areas away from food prep and service; all employee beverages must have a lid and straw. Raw shell eggs were stored on the top shelf of the walk-in cooler, above ready-to-eat foods. Raw potentially hazardous foods must be stored according to their internal cook temperature, and must never be stored above ready to eat items. Three containers of cooked chicken wings in the pizza make-line cold-holding unit and the walk-in cooler had preparation dates of July 23 and July 24. All potentially hazardous foods must be used or discarded within seven days of their preparation date.

Score: 96, Grade: A

Utensils such as spatulas, pans, tongs, whisks, etc. in drawers underneath grill with food residue and heavy grease and food residue in bottom of drawer; clean all utensils and clean drawers.

Score: 95, Grade: A

Bottled employee beverage was stored on shelf holding clean pans beside salad cooler. Employee drinks must be in a single service cup with a lid and straw and be stored in designated areas, away from food service and preparation. Shelf holding clean trays behind soup hot-hold had buildup and food debris. Shelf beside mop sink had dried food debris. Clean nonfood contact surfaces frequently enough to prevent accumulation.

Sliding glass door cooler had accumulation of debris along bottom. Clean frequently enough to prevent buildup. Vegetable sink not sealed to the wall; caulk the sink and wall junction to allow for adequate cleaning.

Raw eggs and pork found sitting on top of ready to eat foods, raw chicken found sitting on top of raw beef and shrimp, raw chicken and beef stored directly beside ready to eat foods uncovered; all raw foods must be stored properly and underneath ready to eat foods according to internal cook temperature.

Score: 90, Grade: A

Knives, peelers, meat mallets, shredders, cutting boards and can openers all found with food residue; dirty dishes were left from the night before; clean and sanitize all items and store clean, and clean all dishes before leaving for the evening. Seven boxes of frozen shrimp were sitting is standing water; foods cannot thaw by sitting in water, water must be flowing over foods to thaw or thaw in cooler. Outsides of ovens, cooler doors, bulk food containers, inside ovens, shelves and carts all found with food residue; clean all areas and keep clean.

Score: 98, Grade: A

Cabinet shelf in bistro area, and underneath hand sink found with possible wood deteriorating; replace with a smooth, nonabsorbent material. Floors found with debris at floor and wall junctures and underneath shelves and underneath shelves in dry storage; clean all floors and keep clean.

Inside of convection oven, shelves at prep areas and dry storage found with residue, Outside of cooler doors, shelves inside walk-in cooler found with food residue. Clean all areas and keep clean. Grease container with heavy buildup of grease found on ground and on container; clean to prevent insect and rodent attraction.
