The following are among the food service establishments inspected from Aug. 22-27 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. The rules and regulations are also available online.

Pupuseria El Guanaco Mex Grill

Score: 61, Grade: U

Person in charge could not demonstrate how to properly wash kitchenware and utensils manually — sink set-up with no rinse step and kitchenware and utensils being washed; could not tell inspector temperature leftover refried beans were to be reheated to; washed gloves and then returned to handling food. Food handlers rinsing and drying hands at hand sink and then putting on gloves to work with food. Open can of Coke sitting on unused flat top grill at cook line. Bottle of water inside two-door sandwich unit. Inside of ice machine (bin and baffle with buildup of mold, mildew. Walk-in cooler holding potentially hazardous foods (leftovers) all between 45-47 degrees F. All leftovers prepared in the facility and date marked were all marked incorrectly; these items were all marked for eight days. Large vacuum-sealed packages of meat that had been thawing in cooler a couple of days per PIC but still not thawed were first seen on counter, then put in meat sink without running water to thaw. Food handlers washing gloves instead of removing them to properly wash hands. When gloves become soiled, they should be removed, hands washed and a new pair of gloves put on.

COS: Discussed procedures with PIC. She was also performing this task improperly. Dishes being washed and rinsed/sanitized in same compartment-no separate rinse in manual dish washing.

Box of raw chicken stored on top of box of raw hamburger chubs in walk-in cooler. Two-door reach-in cooler with leftover storage holding leftovers between 46-47 degrees. External thermometer appeared to be holding around 45 F. Flatware stored with part of flatware that goes into food or customers mouth (eating surface)as part that is grabbed by servers, cooks.

No current certified food safety manager posted. Foods such as cooked peppers, beans, beef, pork sitting on counters with temps 88-97 degrees. No dates on foods in coolers. Vegetable prep sink full of dirty dishes; this sink is for washing vegetables only and to be used for no other purpose.

insides of all coolers and freezers, tongs, scoops, can opener, slicer with debris. Coolers next to drive thru area and next to ice cream machine with water pooled on bottoms. Heavy grease, food accumulation on shelves, outsides of customer self-serve coke machine, gaskets on coolers, outsides of equipment. Floors throughout entire kitchen and especially underneath all equipment with grease, debris accumulation. Automatic pest control sprayers being used in dining area and near self-serve Coke area.
