Kitchen Inspections: Aug. 21-27

The following are among the food service establishments inspected from Aug. 21-27 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Chemical sanitization ware washing machine was not dispensing sanitizer; chlorine registered 0 ppm. Table mounted can opener blade had heavy buildup. Interior of microwave across from dish machine had food buildup. Clean all food contact surfaces frequently enough to prevent accumulation. Cole slaw on the salad bar and fried chicken, raw crawfish, raw chicken wings and raw chicken skewers found in the two-door reach-in cooler had temperatures above 45 F. All potentially hazardous foods must remain below 41 F. The following items were held below 135 F on the hot holding bar for an indefinite period of time: fried chicken, fried crab meat, fried fish and chicken fingers. White refrigerator holding potentially hazardous foods did not have a temperature measuring device. All cold holding units must be provided with a temperature measuring device that is accurate and accessible. Bowl used as a scoop was stored in macaroni located in the walk-in cooler. Scoops must have handles to prevent contamination of the food product. Floors under ware washing machine, cook line, fryers and near buffet bar had heavy accumulations of food debris. Accumulation of food and grease can act as an attractant for pests. Clean area and maintain clean.

Paper towels missing at both hand sinks in kitchen; keep all hand sinks stocked at all times with disposable paper towels. Employee sitting on top of bulk bag of sugar in dry storage room; all foods must be stored to protect from contamination. Do not sit on foods, as this could possibly contaminate foods; take breaks in dining area. Dumpster area found with trash and pooled water on ground; dumpsters are shared with other restaurants. Drain must be repaired so that water will drain and have all trash cleaned up.

Coving was peeling from wall behind two-door reach-in freezer and on wall behind Adcraft steam unit. Re-seal or replace coving to ensure floors are cleaned correctly and so food and water cannot become trapped between floor and wall juncture.

Raw chicken, pork, beef and eggs were stored on top of and beside ready-to-eat foods. Ready-to-eat foods must be stored on top of all raw foods, and all raw foods must be stacked in cooler according to internal cooking temperature. No dates were found on prepared ready-to-eat foods; there must be a seven-day expiration date on foods that are held longer than 24 hours. Cloths used to wipe food contact surfaces were not being stored in sanitizer between uses; all cloths must stay in container that holds sanitizer solution after use. Prep sinks were used for washing vegetables with dirty dishes and soap, and cleaners were stored around sinks. This sink is designated for veggie prep only and must only be used for this purpose; no dishwashing or other activity can take place here. Also remove soap and cleaners. Single service cups, plates and napkins, etc., were stored on floor in wait area and dry storage; all items must be 6 inches off floor to protect from possible contamination. Need to purchase more shelving for storage room to accommodate items.
