The following are among the food service establishments inspected from Aug. 15-20 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Racks of wings and dough not covered in walk-in cooler. Bins holding utensils and equipment have grime and wet food residue collecting on bottom. Utensils like rolling pin, chopper blade, and lids to containers have accumulation of food debris. Inside of mixer bowl has food debris. No foods are date labeled. Repeat violation: Pizza boxes being stored on floor. Boxes stored on floor in back room. No test strips available for chlorine or quat ammonia sanitizers. Repeat violation: Dried food residue on scales and outside of mixer bowl. Dried food accumulating on lids and handles of bulk food containers. Gaskets on coolers beginning to collect food residue and crumbs. Need a lid on trash cans in both employee and public restrooms. Repeat violation: Lots of crumbs and debris along the floor/wall juncture in kitchen.

Cups in food prep area without lids. Pans of fish stored uncovered in reach-in cooler on cookline. Pink slime mold on baffle and black mold on the inner top of ice machine. Gloves kept on while rinsing hands to change task. Gaskets torn on coolers. Repeat violation: Shelves and sides of fryers on cook line and grills have an accumulation of food debris. Repeat violation: Area behind Coke dispenser at drive through has an accumulation of trash and debris, wall/ceiling juncture above three-compartment sink has mold and mildew. Lights above hood vent are not shielded. Lights in walk-in freezer need endcaps. Condenser in walk-in cooler has an accumulation of dust collecting on fans and beginning to collect on ceiling as well.
