Kitchen inspections, April 3 - 9

The following are among the food service establishments inspected from April 3-9 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copy of posted inspection in public view is from three inspections ago (May 14, 2008). Box of opened paper towels on women’s room floor, opened box of trash bags on floor beside mop sink and boxes of cleaners and chemicals on floor beside hot water heater.

Repeat violation: Foods are not being stored covered and are also allowing bottoms of containers to touch foods below. Dishes being washed with dirty water then rinsed in greasy water and not sanitized. Repeat violation: Cloths need to be stored in sanitizer between uses instead of lying on prep tables. Ceiling with dust, couple of tiles cracked and damaged, coved tiles baseboard next to ice machine damaged. Replace light shield near dishmachine that has a crack in the shield.

Repeat violation: Dishmachine not dispensing correct amount of sanitizer. No date labels on foods. Shrimp and chicken in plastic to-go bags. Most current inspection needs to be posted; post handwashing signs at all handsinks. Repeat violation: Replace missing test strips that are used to check sanitizer level. Repeat violation: Repair/replace damaged ceiling tiles on dry storage; holes in wall in restroom and missing coved baseboard at front counter.

Gallon food jug cut out to make a scoop being used to scoop rice. Sinks “sealed” to wall with duct tape. Shelving above three-compartment sink greasy. Large accumulation of grease in front of grease receptacle in Dumpster area.

Omelet cups stored above grill with egg residue inside them. Drink dispenser nozzles and diffusers with accumulation of mold. Floor needs a good cleaning in walk-in cooler and dry storage. No chlorine test strips available to monitor strength of sanitizer solution for cloths. Drawers for pan storage under grill with food debris. Current inspection posted behind line upon wall where customers cannot view.

Handsink adjacent to three-compartment sink and prep line without paper towels at start of inspection. Several reach-in coolers/freezers without thermometers inside to accurately monitor interval temperatures. Food handler on sandwich line with watch. Wall dusty above three-compartment sink and handwash station in dishroom. Fan in drive-through very dusty. Walk-in cooler evaporator leaking condensate onto boxes of sealed thawing hamburger. Lexan containers stored above three-compartment sink with build up of grease inside. Current inspection not posted in public view — back behind counter — and not posted as required at drive-through.
