Kitchen Inspections: April 10-16

The following are among the food service establishments inspected from April 10-16 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Golden Jar

Score: 79, Grade: C

Personal drinks in cans, cups, not in approved containers in kitchen on prep counter; all drinks in kitchen must be in a single-service cup with a straw and lid. Hand sink next to dish area without paper towels; hand sink near front kitchen area with tape over dispensing area of paper towels so that no paper towels can be retrieved and used. All hand sinks must stay stocked at all times with disposable paper towels and be accessible. Both hand sinks found with residue inside sink and on handles; keep sinks clean and free of debris. Foods not being stored covered in coolers; all foods must stay covered to prevent possible contamination. No dates cooked ready-to-eat prepared foods in cooler; all ready to eat foods must have a seven-day expiration date. Bottles of chemicals being stored next to uncovered foods; all chemicals must be stored away from foods to prevent possible contamination. No hair restraints being worn on any food handler; all food employees must wear a hat or hairnet. Cloths used to wipe food contact surfaces not being stored in sanitizer between uses; keep cloths submerged in sanitizer at all times immediately after use. Test strips missing for chlorine sanitizer; replace missing test strips so that levels of sanitizer can be monitored. Food residue buildup on all shelving, on outsides of all bulk containers, on outsides of hot holding area, on outsides of all coolers and freezers, insides gaskets of coolers and freezers; all areas must be cleaned and kept clean. Personal items such as jackets, handbags, office papers, foods, etc., mixed in with all customer items; personal items must be stored in a designated separate area away from items for customers. Remove some personal items from establishment to free up extra space.

Condiments in top of one-door sandwich unit cooler that is outside where customers can lift cooler lid and items are out for self-service were uncovered at that point. Need to keep condiments better covered for customer self-service. Hot water heater was not functioning at time of inspection; water not 100 F as required at hand sink. Hands sinks must be provided with 100 F to help soap clean hands.

No hand soap available at drink station hand sink; each hand sink must be provided with soap. No paper towels at hand sink; a method to dry hands must be provided to encourage proper hand washing. Whisk and sanitizer bucket sitting in hand sink at drink station; a hand washing sink may not be used for purposes other than hand washing. Cooked chicken found cooling in large container on prep surface. After reportedly cooling for one hour, chicken temperatures ranged from 110-99 F. Chicken placed on ice bath; temperatures ranged from 61 F to 108 F after 1.5 hours. Chicken then shredded, placed in shallow container and put on ice bath. After two hours, chicken had cooled to required 70 F or below. Cooked potentially hazardous foods must cool from 135 F to 70 F within two hours, then from 70 to 41 or below within an additional four hours. Cooling can be accomplished by placing food in shallow pans, separating food into smaller or thinner portions, using an ice bath or adding ice as an ingredient. Low boy cooler near grill with water pooling on bottom; equipment must be maintained in good repair. Shelving in walk-in cooler with accumulation of food debris; clean these shelves as often as necessary to keep them clean. Employee items hanging and resting on shelving used to store food items; personal items must be stored in an area that prevents contamination of food, equipment, utensils, linens and single service articles.

Certified food safety manager certificate expired; a current CFSM must be obtained. Floors found with grease and food residue behind, underneath equipment and at floor and wall juncture. Several ceiling tiles were missing in kitchen and storage area. Clean all floors and replace all ceiling tiles.

Score: 81, Grade: B

Employee touching chips for nachos with bare hands after properly washing; employees shall not contact ready-to-eat foods with their bare hands and shall use a suitable utensil such as deli tissue, tongs, single-use gloves or dispensing equipment. Raw beef and raw chicken in two-door reach in cooler at 54 F and 55 F, respectively; potentially hazardous foods must be kept at 41 F or below. Make sure doors are shut tightly, keep top closed, monitor temperatures and call for service. Lid of reach-in cooler next to grill was broken, exposing Styrofoam padding. Lid of ice bin in cooler was broken. Gasket of one-door upright cooler ripped. These must be fixed to allow for proper cleaning and to prevent possible contamination.

Beef sitting out on top of stove with internal temps 83 degrees; hot held potentially hazardous foods must be held at 135 degrees or higher and not sitting on counter. No dates on foods; a seven-day expiration date must be labeled on prepared ready-to-eat foods.

Chicken pot pie in reach in bottom portion of the prep line cooler was not wrapped like other pies; all items must be stored covered to prevent contamination. Four frying pans on shelf in dry storage room had accumulations of grease and food debris; all food contact surfaces must be cleaned and sanitized before storage. Water was pooled in bottom portion of wall mounted vegetable slicer; all equipment and utensils must air dry to properly sanitize.

Container of raw chicken stored on shelf above raw beef in reach-in cooler. Container of ham lunch meat stored below raw seafood and beef in reach-in cooler. Raw shell eggs were stored above cartons of orange juice in reach-in cooler. Ready-to-eat foods must be stored above raw foods, and raw foods must be stored according to their cook temperatures, with the highest internal cook temperatures on the lowest shelf. Metal pans and baking pans were stacked wet on shelves across from the three-compartment sink; all items must air dry in order to properly sanitize.

Unable to locate past shellstock tags for oysters. Shellstock tags must be retained for 90 calendar days from the date that the shellstock are sold or served; locate shellstock tags. Both lids to cardboard Dumpster open; break down cardboard boxes to allow lids to be closed.

Pans, Lexan containers, utensils such as ladles, scoops with food residue and containers holding these utensils found with food and oil inside and utensils laying in debris; clean and sanitize all items and store in clean containers. Coolers in grill area with heavy condensate leak; this could cause strain on cooler to maintain temperatures. Floor in walk-in cooler with metal pulling away from floor; this must be repaired properly and may have to replace floor. Can racks, shelves, outside bulk food containers, top of dish machine found with residue; clean all areas and keep clean. Floors with heavy accumulation of debris behind ice machine and underneath all equipment and at floor and wall junctures; clean all the way to the wall and keep clean.
