The following are among the food service establishments inspected from Jan. 20-26 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. The rules and regulations are also available online.

Pizza makeline has an area where trim is missing and food is embedded between edge of makeline and food storage area. Hand sink in employee restroom needs resealed to wall. Mop sink sealant to floor peeling away and molded. Paper towel dispensers at hand sink in kitchen and employee restroom have dead batteries. Cooler doors, walk-in cooler racks and some equipment has food debris and dust. Plumbing at back hand sink is leaking. Cove throughout kitchen detached and broken.

French fry cutter with accumulation of dried potato debris in blades. Electric can opener with accumulation of dried food debris on blade. Low temperature chemical sanitizing dish machine not dispensing sanitizer. Dumpster left open. Grease container with accumulation of grease on top of container around lid and on ground all around container and dumpster.

Foods such as ribs, loaves of bread, chicken, hot dogs in chest malfunctioning chest freezer. Containers of stew and baked beans, chicken being put straight into coolers with tops on. Chicken, ribs left out on counter to thaw. Water pooled in bottom of prep cooler and dripping from top in two-door cooler.

Sanitizer cloth bucket concentration not properly made. Utensil handles for hamburger patties stored on meat. Box of paper towels on floor in back storage. Area near ramps in kitchen missing some tiles and area near potatoes needs repairing. Light shields must be cleaned.

Unwrapped single service salad bowls on storage rack by three-compartment sink were splashed by soapy water. Grease dripping from cleaning equipment hanging on wall and accumulated on floor near carbon tank. Light shield in warewash area cracked, warped and needs replacing.

No towels at either hand sink or in restroom. Interior of microwave has food splatter, debris. No date-marking system in place. No employees wearing hair restraints. All scoops handle down in bulk containers. Soy sauce buckets and other plastic containers that held food being reused for food storage. Employee wearing one glove, washed it to change tasks. Freezer door bent away from frame. Gaskets on all coolers have food debris and grease. Hot water below required temperature.
