Kitchen Inspections

The following are among the food service establishments inspected from Sept. 4-7 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 92, Grade: A

Establishment does have correct EPA regulated chemical but does not have a written step-by-step procedure to follow if a vomit/diarrheal event to occur. Various items located in the back reach-in cooler with out a date label.

Brunswick stew at 130 F after reheating on stove for three hours. Half & half packages stored at room temperature (74 F) although packaging states the need to keep the item refrigerated. Multiple time-temperature control safety items in warmer cabinet at an inappropriate hot holding temperature.

Mold accumulation inside the ice tunnel of the mini ice machine at the customer dining area. Employee wearing wrist bands while preparing food. Quaternary Ammonia Sanitizer being used at the three-compartment sink, employee was told to test the concentration of the sanitizer she used Chlorine test strips.

Sanitizer bucket little to no solution measurement. Ready-to-eat potentially hazardous food held more than 24 hours not date marked according to earliest date of opening/preparation. Cooked chicken, cooked noodles, raw chopped beef were observed in the walk in cooler and refrigerator cold holding units without the appropriate date-marking.

Person in charge not present. Employee unaware of training on employee health and their responsibility to report foodborne symptoms and diseases. Establishment could not supply written procedures for the cleanup of vomiting and diarrheal events upon request. Observed two cans severely dented at rim stored in establishment.
