Kitchen Inspections
The following are among the food service establishments inspected from March 26-30 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. An employee was observed engaging in food preparation without the use of an approved hair restraint. Two stacks of to-go pans stored face up on top of warmer cabinet. Vent hood above fryers coated with grease and dust buildup. Walls above drive-thru window, next to single use article storage, were visibly soiled with debris.

Observed buildup of slime in the interior of ice machine. Egg rolls beside fryer were found at temperatures of 70-73 F, above required 41 F. Numerous damp wiping cloths left out on prep top cooler and on side of grill. Inspection report not displayed in drive-thru window. Grease hood soiled with excess accumulation of greases and oils.

Certified Food Safety Manager unable to ensure compliance with the requirements of this chapter in the following foodborne illness risk and intervention factors. Multiple employees observed entering kitchen and beginning cleaning duties before properly washing hands. Establishment does not have procedures for the cleanup of contamination events. Raw chicken stored in same shelf as raw steak and raw pork in three-door cooler. Raw steak also stored above ready-to-eat produce. All foods prepared or removed from commercial packaging, including precooked chicken, hot dogs, salsas, rice, cerviche and other foods held in establishment for over 24 hours were not dated with a disposition date. Orange-yellow 270 food coloring held on site not approved by FDA for use. Raw octopus observed thawing in vegetable sink. After instructed CFSM to remove and sanitize sink, employee then engaged in dish washing at vegetable sink. Scoops found in bulk storage containers with handle buried in the product. Ceiling tile damaged above area used for food storage.

Observed accumulated food debris on the internal surfaces of the microwave oven unit in the kitchen which is used to warm up food items for both employees and customers. Chlorine sanitizer solution in sanitizer bucket in the kitchen with a concentration exceeding the maximum allowed. Metal pans with cookies and fried noodles covered with plastic wrap at self-serve buffet for consumer service. Observed scoops with no handles stored inside food items touching the food, in the kitchen.

Regional events
