Kitchen Inspections: Nov. 3

The following are among the food service establishments inspected Nov. 3 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Two-door sandwich unit was not keeping potentially hazardous food items at required 41 F or below. Plastic drink cup with straw was found on prep table next to in-use cutting board. Partially consumed bottle of water was found on shelf below prep table. Drinks in kitchen must be in single service beverage cups (disposable) with secure lids and straws and stored to prevent any possible contamination of food or food contact surfaces. Packages of bread, bagels and English muffins were found out for consumer self-service, which does not protect food from where consumer reaches into bag, does not adequately protect food from possible contamination. A more effective dispensing method with a suitable utensil will need to be implemented. Food handler found with cloth tucked into apron and using cloth to wipe knife. Cloths should be stored in sanitizer between uses and if the knife needs to be wiped while in use, a paper towel can be used. Employee was found washing kitchenware and utensils in dish pit wearing same disposable gloves between handling soiled kitchenware and utensils when loading dishwasher and then handling clean and sanitized kitchenware and utensils to put them away. Gloves must be discarded when soiled and employees must wash hands and put on clean gloves to put up cleaned and sanitized kitchenware and utensils.

The two-door cooler on the prep line had an ambient temperature of 45 F; potentially hazardous foods stored in the unit ranged from 47-53 F. All potentially hazardous foods must be maintained at 41 F or below to inhibit bacterial growth. Several items were found in the walk-in cooler were not date marked. All temperature control for safety foods must be date marked and discarded within seven days of their preparation (including the day of preparation).
