Kitchen inspections, May 4 - 27

The following are among the food service establishments inspected from May 4-27 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Food employee rinsed hands off and continued touching food contact surfaces. Repeat violation: Wiping cloths not stored in sanitizer between uses. Floors need thorough cleaning beneath equipment and below tables all the way to floor wall juncture due to accumulated grease, food debris. Non-food contact surfaces had grease accumulation (grill/fryer static), prep tables, etc.

Employee slicing tomatoes with bare hands. Knife rinsed under running water, wiped with cloth, and placed on knife rack. No sanitizer registering in sanitizer compartment sink. Blenders have food and grime build up along interior lid, gasket and detachable pieces. Spoon stored in standing water. Old equipment stored on floor. Boxes of cups and lids on floor. Styrofoam and tape under freezer chest is peeling apart and holding moisture.

Foods stored uncovered. Racks of cooked egg rolls sitting out — egg rolls were at 68 degrees and had been out for three hours. Cloths not being stored in sanitizer. Grease build up on sides of fryers, on back of wok grill and a few shelves. Numerous cardboard boxes and tin cans being saved and stored inside restaurant. Floors need to be cleaned better especially underneath equipment.

Gallon containers of salad dressing with mold on top and around lids. Several bottles of lemon juice covered in mold. Individual packages of jelly mold in moldy box (all in walk-in cooler). Box of rolls and containers of jelly on shelf below walk-in cooler evaporator being dripped on by condensation leaking from evaporator drip pan. Walk-in cooler door gasket missing at bottom of door allowing for cold air to escape.
