Kitchen Inspections: March 27-April 2

The following are among the food service establishments inspected from March 27-April 2 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Mold found in both sweet tea dispensing nozzles at drink station. Mold on ice machine baffle. All food contact surfaces must be cleaned at a frequency adequate to prevent accumulations. Lemons at drink station stored uncovered; all food items at self-service stations must be covered to prevent contamination. Scoop was stored in sugar bin below prep table with the handle in the food product; scoops may be stored in container only if handle is above the food product. Several boxes of single service items were stored on the floor in dry storage area; all food service items must be stored six inches off the ground. Top and side of grease container had accumulations of grease; refuse areas must be cleaned frequently enough to prevent accumulations of grease, which acts as an attractant to pests and rodents. Floor under mop sink had accumulations of stagnant water which acts as an attractant for pests and rodents.

Wall-mounted knife holder had food residue and debris. Brushes hanging behind three-compartment sink had heavy food residue. All food contact surfaces must be cleaned and sanitized regularly, and must be clean to sight and touch. Wiping cloths were draped over the splashguard on the hand sink, and on the dough preparation table; wiping cloths must be stored in sanitizing solution. Plastic cup being used as a dispenser was stored in the sugar bin near the three-compartment sink. Small dispensing cups were found in the cinnamon sugar and parmesan cheese bins in the walk-in cooler. Scoops stored within product must have a handle and the handle must remain above the food product. Vegetable sink was coming away from the wall. Equipment that is fixed must be sealed to the wall for cleaning purposes.

All refrigerated, ready-to-eat, potentially hazardous foods prepared and held in food establishment for more than 24 hours shall be clearly marked to indicate the date the food was prepared or is to be discarded. Commercially processed foods must have the date the package was opened or is to be thrown away. Utensils stored in room temperature water between uses. In-use utensils must be stored in one of the following ways: in food with their handles above the top of the food and the container; on a clean portion of the food preparation table if the table is to be cleaned and sanitized frequently; in running water; or in a container of water that is 135 F or greater. Duct tape on splash guard of dish machine and on shelf above steam units. Duct tape is not cleanable; non-food contact surfaces shall be constructed to allow for easy cleaning.

Area must be maintained free of unnecessary clutter and cleaned frequently to prevent the attraction of pests and rodents.

Back-up food items to stock food bar for evening buffet on stove top with temperatures 102 degrees F-108 F beans, 105 F beef stew, 120 F greens; potentially hazardous foods once cooked and reheated and to be hot held for service must be held at 135 F or above. Pan of cooked potatoes on drain board at meat sink, colander in sink; vegetable sink must be used for vegetable prep in order to insure vegetables are not contaminated by meat prep or residue. Large buildup of grease and food debris was found behind cook line. More frequent cleaning is needed to prevent buildup that can be attraction for insects and rodents. Employee telephones and charging cords were on shelf above vegetable prep sink and next to vanilla wafers and other food items on shelf. Designate and area away from food prep and storage for the storage of personal items.
