Kitchen Inspections: March 13-19

The following are among the food service establishments inspected from March 13-19 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Raw chicken thawing in vegetable sink without running water. Cooked ground beef cooling on rack next to hand sink allowing ground beef to be exposed to splash. Ice bin missing cover in wait area; is in a location that allows customers to pass by on their way to the restroom. Food handler was wearing bracelet. Food handler was seen without hair restraint. Ceiling panels were missing or damaged in kitchen.

Raw chicken stored over ready-to-eat corn and uncooked french fries in reach in cooler. Eggs stored above prepared cheese dip and unwashed vegetables stored above vegetables. Tamales, taquitos, and chile rellenos in reach-in cooler stored uncovered. Taco shells were stored on shelf above steam table. Chile rellenos, poblano peppers, and large container of shredded lettuce were stored uncovered in walk-in cooler. Flan in reach-in cooler was prepared two days ago and did not bear a date mark. Tamales in reach-in cooler also were not marked. Several employees working in the kitchen had aprons that were heavily soiled. Several employees had wiping cloths stored in their aprons. Plate was being used to scoop rice by steam table. Bowl was stored in pico de gallo in walk-in cooler. Spoon was fully submerged in cheese dip. Several pans and plastic containers on shelves across from the three-compartment sink were stacked wet. Women’s restroom did not have a trash can with a lid. Dumpster door was open. Both receptacle and grease trap were dirty. Entire area had grease buildup that was covered with kitty litter.
