Kitchen Inspections, June 28-July 1

The following are among the food service establishments inspected from June 28-July 1 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below.

Inspections (frequency of) a food service establishment are conducted based on risk categorization.The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued.

To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance.

Permits must be posted in public view at all times. Food service establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment.

One door reach-in cooler under batter station with damaged door gasket allowing food debris to accumulate inside gasket. Salad prep cooler door gaskets damaged also. Floors need better cleaning at floor/wall juncture under shelving in dishroom and under, along wall in prep area.

Bus tub of onions on floor under three-compartment sink. Current inspection not posted. Delicatessen cooler still leaking condensate. No sanitizer test strips available to monitor the strength of sanitizer to be used in three-compartment-sink for sanitizing kitchenware, utensils and in cloth storage containers for cloths used to wipe food contact surfaces. Floor needs a good cleaning. Many flies throughout kitchen. Front door entrance has a large gap underneath and restaurant is located close to chicken plant.

Food stored in grocery bags and soy sauce buckets. Many foods in coolers uncovered. Interior of microwave with food splatters. Containers with condiments and ingredients at cook line covered in grease, food debris. Makeline cooler failing. No date marking system in place. Home type bug spray stored with food and single-serve items. Food stored on floor and crates in walk-in and kitchen. Single use, service items stored in greasy cardboard boxes with food debris. Gaskets on makeline, walk-in cooler and freezer damaged. Three-compartment-sink no longer attached to wall. Rice steamers are covered in aluminum foil and have saran wrap around lid held in place with a paper clip. Cardboard on surfaces greasy, dirty. Gaskets on all coolers have accumulations of mold, mildew, food debris, grease; all equipment surfaces have grease, food debris. Floors throughout have a heavy accumulation of food, grease, trash, water; there is a large amount of storage on the floor and on crates, which cannot be moved easily. Screen door has 6-inch gap at top with cardboard that does not close gap.
