The following are among the food service establishments inspected from June 11-25 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Child in food prep areas in kitchen. Person in charge was not in restaurant at all times to ensure proper cooling procedures were followed. At least owner or one food service manager must have the ServSafe Certification. Paper towels inaccessible at hand sink. Several food containers in makeline cooler and reach in cooler that were uncovered should be covered to prevent possible contamination. Food contact surfaces had food debris (i.e. knives, bowls, and measuring cups). Warewashing machine not being properly supplied with sanitizer solution. Several foot items out of temperature on makeline cooler (i.e. guacamole, cheese, and sour cream). Food on steam table not at 135 degrees F (i.e. beef, chicken and shredded chicken). Several food items (i.e., beans and cheese) were out of temperature, after cooling time of two hours, to get temperatures from 135 to 70 degrees F. Multiple food items in cooler being kept after 24 hours not labeled with date for expiration. Improper cooling methods being used for potentially hazardous foods (i.e. beans and cheese. Thermometers for taking food temperatures not calibrated. Silverware not in a way to prevent contamination of feeding side.

Many food contact surfaces have food debris, residue — veggie sink, slicer, trays, container lids, etc. Fountain drink nozzles have white unidentifiable precipitate. Packages of alfredo sauce on storage rack covered in dust and food residue. No hair restraint worn during food preparation. Wiping cloths not being kept in sanitizer between uses. Single-serve items not stored six inches above floor and napkins package has white precipitation outside of paper. Nonfood contact surfaces have grease accumulation and food residue (counters, storage racks, hood vents and racks). Hot water faucet on handsink at times incapable of supplying hot water without disturbance due to plumbing problems. Multiple flies throughout kitchen and in areas of food prep, restroom, etc.

Soda dispensing nozzles and diffusers at drive-through with build up of mold. Lettuce chopper with dried lettuce. Containers of sanitizer for the storage of wiping cloths with large build up of food debris and soil. Large accumulation of spilled grease in dumpster area around grease container; the grease has accumulated to the point it is being washed down spillway to grassy area below parking lot. Grease container also with large accumulation of grease on lid and front of container. Floor needs good cleaning at floor-wall juncture in basement (behind shelving); wood baseboard needs to be sealed to floor in basement and to the wall in some areas. Painted floor in basement is peeling, especially in areas where water is dripping and accumulating. Floor needs cleaning under front counter, under self-serve soda dispensing area and coffee vending cooler. Large number of flies throughout establishment. Appears to be problem with cockroaches in basement (seen).
