Kitchen Inspections July 6-12

The following are among the food service establishments inspected from July 6-12 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Equipment and utensils stored in prep room hand sink. Hand sinks may not be used for purposes other than hand-washing. Grilled chicken found cooling in walk-in since approximately noon, found at 87-99 degrees Fahrenheit at 2:15 p.m. Handles of coolers, bulk flour storage bin lids and shelving with buildup of food debris and crumbs. Women’s restroom did not contain a covered trash can. Wall in dish room behind the rinsing sink found with large amount of dirt and debris built up.

Interior components of tea urn nozzle, and rack above three-compartment sink used for storing clean dishes with a buildup of debris and grime. Inspection posted for public view is not the most recent. Grease and other food debris built up underneath grease receptacle in enclosure directly outside of back door, presumably attracting gnats and other insects into establishment.

Utensils at three-compartment sink are being cleaned in the order of wash, sanitize and rinse before air drying. Right side cold water faucet handle at three-compartment sink sprays water along threads of handle when turned on- needs repaired. Kitchen back door kept open with screen door kept closed in place. Screen door ripped in multiple places and unable to protect establishment from the entry of flying insects and pests.

Accumulated grime debris and residues observed along baffle and interior food-contact components, surfaces of ice machines. Grime debris found in nozzles of tea urn spots when disassembled. Accumulated debris along blade of table mounted can opener. Slicer wiped down with soapy cloth and reassembled for use without being sanitized. Spray bottles of different colored cleaners and sanitizers found in server station area, food prep area and chemical supply closet without labels. During inspection, PIC unable to locate food probe thermometer used for taking internal food temperatures. Fish held in standing ice water in drawer of lowboy cooler. Observed employee handling cut of meat at grill line wearing bracelet. Wiping cloths used for wiping food prep surfaces stored submerged in buckets of detergent solution between uses. Pans and containers stored wet-nested on ready-for-use clean utensil rack at warewashing area. Observed food employee wiping down prep tables where food crumbs, debris fell onto pots and pans stored upright on bottom shelves of tables. Mop sink has deteriorated to pitted concrete that holds standing water and basin cannot be cleaned. Accumulated food debris, residues, grease, and/or dust on interiors, exteriors of coolers, cooking equipment, sink basins and drainboards, ice machines, fire suppression system above back cookline, speed racks, storage shelves, wire racks, utensil hooks, hood vents at warewashing and grill areas, and other various equipment surfaces throughout establishment. Concrete at dumpster area pitted and holds standing water since some portions of concrete sit lower than drain. Dumpster lid bent upward and unable to keep refuse properly enclosed. Accumulated food debris and residues along floor/wall junctures and under, behind equipment throughout establishment. Accumulated grease observed along wall and ceiling area surrounding exterior sides of hood vent and around components of ANSUL system to the left wall, ceiling of hood vent. Flies present in dry storage area, ice machine area, food prep area, and back food storage area.

Score: 91, Grade: A

Rice to be portioned cold removed from cooler and set under prep table to be portioned later with temperature of 71F. Several sheet pans of ribs being brought into walk-in cooler from cooking and cooling at room temperature since 11 a.m. with temperatures of 73F to 75F at 1:30 p.m. Ribs not cooled to 70 F within two hours and were voluntarily discarded.

Repackaged chicken and vacuum sealed whole cuts of beef thawing in same bus tub in walk-in cooler and chicken liquid has dripped into bottom of bus tub where sealed cuts of meat are laying. In freezer, repackaged bags of chicken stored with repacked bags of salmon and repacked bags of cheese. Medications (bottle of pain reliever, box of cold and flu medication) stored on shelf above three-compartment sink with equipment, utensils. Unlabeled spray bottles of chemicals in bins under three-compartment sink. Vegetables delivered yesterday still in the boxes on floor in walk-in cooler. Employee properly stored delivered items on shelves in walk-in cooler.
