Kitchen Inspections July 13-July 23

The following are among the food service establishments inspected from July 13-23 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Score: 86, Grade: B
Raw chicken stored in ice chest across from flat top grill had a temperature of 55 F. Buttermilk at breading station was 74 F. All cold held items must remain at 41 F or below. Scoop handles were stored with handle in product of bacon bits and lettuce. Handle must be above food product to prevent contamination. Paint was chipping on shelf holding clean plates beside the grill; resurface with durable, easily cleanable, non-corrosive paint. Threshold of walk-in freezer was damaged, exposing wood underneath; repair. Grates in vent hood broken; replace. Lid of ice chest across from grill had buildup of mold. Stainless table with under shelving storing clean pans had food debris and dust. Clean all non-food contact surfaces frequently enough to prevent buildup. Paint chipping on ceiling above prep table, walls near grill and in dishwashing room. Vent next to ice machine, behind shelving, had heavy buildup of dust. Wall behind ice machine had heavy buildup and dust. Wall next to air conditioning unit in dry storage was moldy. Ceiling and wall juncture above prep table must be re-sealed. Maintain physical facilities in a state of repair.

Bottle of water found under biscuit table for food handler to drink and plastic cup with plastic lid and straw found in the drink holder at cook line. Drinks may be in the kitchen if they are in single-service cup, disposable with a secure plastic lid and a straw. Large container of vegetable soup in walk-in cooler found cooling from last night with temperature of 46 F. Cooked foods to be cooled for cold holding must be cooled from 135 F to 70 F within two hours and from 135 F to 41 F within a total of six hours. Cloths used to wipe food contact surfaces, prep tables, were not stored in sanitizer solution between uses. Sanitizer solution set-up for cleaning cloths to be stored in between uses found without detectable sanitizer. Prepping potatoes for baking in sink designated for meat preparation. There is a vegetable sink for the washing of fruits and vegetables and this is the only sink that may be used for the preparation of fruits and vegetables. No self-closer installed on the door of the employee restroom. Doors to restrooms must be self-closing.

Cooked shrimp sticks on prep table beside fryer were 73 F. Potentially hazardous foods must be maintained at 41 F or lower. If shrimp sticks are added, they must be discarded within six hours of removal from refrigeration or when the internal temperature of the product reaches 70 F. Knife on magnetic rack behind three-compartment sink had tape covering the entire handle. Repurposed plastic containers found on shelf in front of three-compartment sink were not durable and easily cleanable or NSF. All utensils used in food service must be durable and easily cleanable.

Clean dishes on shelf beside hand sink are exposed to contamination from splash of sink. Install a splash guard on the left side of the hand sink to prevent contamination of clean equipment. Fan in front service area pointed at milkshake machine had buildup of dust and grease; clean at a frequency that prevents accumulations. Ceiling in ware washing room is sagging, leaving some portions between tiles unsealed. All physical facilities must be maintained in good repair. Have ceiling repaired to protect food and equipment from contamination and prevent the entry of pests.

Precooked egg patties, steak, and cut tomatoes in the double door reach-in cold-holding unit below the toaster had temperatures of 49, 51, and 48 F, respectively; cold holding unit ambient temperature was 52 F. Cup was stored in bag of ice and used as a scoop. Scoop must have a handle and the handle must be above the food product to prevent contamination from hand contact.

Leftover potentially hazardous food items were not labeled with day of preparation. Potentially hazardous food prepared in house and held over 24 hours are to be labeled with date of preparation and seven day discard date. No dedicated vegetable prep sink, use extra three-compartment sink in back of kitchen for vegetable sink. Divide by 12-inch splashguard notched so faucet can service both end compartments to be able to prepare both vegetables and seafood. Clean utensils were stored on curtain rod along wall under paper towel dispenser and close enough to hand sink to receive splash from handwashing; store clean utensils away from any sources of possible contamination.

Cutting boards are heavily scarred and need to be either replaced or resurfaced.
