Kitchen Inspections for May 16-May 22

The following are among the food service establishments inspected from May 16-22 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processes performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Employee drinks in kitchen in wrong kind of container. Steak, chicken, shrimp in drawer cooler with temps 55-65 degrees. Foods must stay 41 degrees or below. Food handler with bracelet. Cloths laying on all prep counters. Evaporator unit in walk-in cooler with many holes all over cover and water dripping from holes.

Hand sink in kitchen for use by dishwashers, cooks, and prep personnel blocked by five-gallon buckets (some with kitchenware soaking). Sheet pans with individual salads stacked on top of each other in wait area merchandise cooler with bottoms of sheet pans touching salads. Many used wiping cloths lying on prep surfaces throughout kitchen at start of inspection. Plastic drinking cups that have been washed and sanitized are being stacked wet in wait area.

Brisket, shredded chicken, mushrooms, cheese, diced onion and bell pepper were unwrapped/uncovered, or laying directly on shelves, or stacked on top of each other, uncovered. Brisket in cooler and sausage opened the day before without discard date. Advil and supplement stored on shelves with kitchenware. Vegetable sink drain pipe leaking all over floor.

No PIC/CFSM present. No PIC designated. Employees did not wash hands between changing task and glove use. Ice machine and soda nozzles on machines had slime/mold. Sandwich two-door unit on cook line not holding food below 41 degrees. Raw chicken, pork, egg rolls, spring rolls, cheese wonton out of temp above 50. Bins of precooked chicken pieces and commercial egg rolls open without date marking in cooler over 24 hours (couple of days). Dishwasher loading dirty dishes and loading clean dishes without changing gloves. Outside prep bowls with dried food debris. Shelves above four-compartment sink used to clean utensils have dust and debris. Drain plug missing on one dumpster. Area is not clean with debris and trash bag. Observed many small roaches under stove and prep tables.

Hand sink blocked by small prep table pushed up between hand sink and prep sink for prepping vegetables. On top of sandwich unit at cook line, raw chicken wings are panned and stored next to the cooked chicken wings. Manager, designated as PIC, could not provide answers to basic food safety questions regarding food temperatures, how to wash hands and provide instruction to employees handling food in kitchen. Dishwasher loading soiled kitchenware/utensils into dishwasher and unloading clean kitchenware/utensils without washing hands in between handling soiled and clean kitchenware/utensils. Plastic cups and coffee travel mug on prep table, shelf above rice cooker and lower shelf at cook line. Sandwich unit (first one) not able to keep foods stored at required 41 degrees or below (49-64). Second sandwich unit with several food items stored above 41 degrees; tofu 45 degrees and previously cooked chicken 49 degrees. Food items holding on buffet below required hot-holding temperature of 135 degrees (102-115). Walk-in freezer with large amount of food on floor; so much is on floor that entry into the unit is impossible. Many used wiping cloths laying on prep tables at start of inspection. No sanitizer solution set-up for the storage of used cloths. Hood vents and inside hood, Ansul spigots with large accumulation of grease that can drip below onto food/food-contact surfaces work area. Floor needs a good cleaning under cook line at floor/wall juncture. Between prep table and fryers, accumulation of grease. Gas piping on wall behind cook line, water heater with accumulation of grease. Baseboard has fallen off wall behind cook line. Food (chicken pieces) and grease have accumulated behind baseboard. Observed many live roaches under equipment and behind water heater.
