Kitchen Inspections for June 21-June 25

The following are among the food service establishments inspected from June 21-25 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. No dates on ready-prepared foods in any coolers. Prepared foods stored on floor; employee putting bulk spices on floor then using as a prep table. Upright cooler used to store glasses with heavy rust and hole in plastic in bottom. Floors underneath hand sink, cooler at bar with heavy black residue; floors underneath grill with heavy grease. Plastic food service buckets have mold, mildew, food debris, being used for storage of pasta and other foods. Foods prepared and cooled on Sunday and Monday have not reached 41 degrees. No hair restraint at beginning of inspection. Nearly every equipment surface in kitchen coated with grease and dust, including hood system. Floors, walls, and ceilings coated with grease, dust, food debris.

Walk-in freezer with condensate leak and block of ice; shelves in walk-in freezer with cardboard, peeling foil, other shelves in kitchen with cloths or wax paper lining shelf.

Rice being cooled on counter with syran wrap over rice, and no ice bath used. Wiping cloth sanitizer solution tested at zero ppm (chlorine) using test strips. Detergent was mixed with sanitizer. Interior of make line cooler temping at 56-70 degrees, while top of cooler temping at 42 degrees. Warewash machine leaking below. Warewash machine using chemical as sanitizing (chlorine) temped at 111 degrees for wash temperature, and not required or manufacturer’s recommended of 120 degrees or more. Counters beneath tables and side of equipment need additional cleaning. Ceiling and light cover has water leak stains and ceiling tile damaged.

Slicer used today, cleaned and sanitized and ready for next use with food debris stuck (onion skins) on back of blade. Many leftover food items past seven-day use, or discard date for foods made in-house. Containers of sanitizer stored on prep table during prep and on edge of prep sink over cooling food products in ice in sink. All shelving under prep tables needs better, frequent cleaning; food debris, grease accumulation on all shelving.

Grits, chili, gravy in steam unit with temps 121-130 degrees. Foods had been in hot-holding for over four hours. All upright coolers at cook line dripping water from evaporator. Water is pooling heavily on bottom. Shelves in cooler next to grill with heavy rust, paint peeling on shelves.
