Kitchen Inspections for June 14-19

The following are among the food service establishments inspected from June 14-19 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.


A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Food employee did not wash hands prior to going from preparing raw beef to stirring refried beans. Food such as onions, corn product, etc. on floor in dry storage. Septic system for restaurant not regularly maintained. Grease is rising up thru tank lid and moving up the riser. No lid on last septic tank. Currently covered with particle board/cardboard that is rotten. All tanks need approved risers. A permit will be necessary from the Hall County Environmental Health Department and work done by Commercial certified septic installer. All grass, brush should be removed from the absorption field. An official letter will be sent to the property owner. Regular pumping of the grease trap and septic tanks is necessary for proper function of the system. Walls and serving areas are in need of fresh epoxy paint. Holes in walls. Ceiling tiles damaged and brown. Cooler in back is dark due to no bulb.

No paper towels at hand sink in kitchen or bar. Hand sink in kitchen dirty. Hot water sanitizing machine has been replaced. Sanitizing pressure for final rinse is not registering and should be between 15 to 25 psi. Walk-in cooler’s (for beer kegs) floor is sinking down, seal broken and threshold damaged. Makeline cooler has water in bottom. No sanitizer test strips for quats sanitizer used in cloth buckets.

Food not properly separated in walk-in cooler. Raw food intermingled with ready-to-eat food. Shell eggs stored next to ready-to-eat food, and milk containers stored next to raw chicken. Large hole in walk-in freezer door and frozen shut. Shelves, inside coolers, equipment has food debris, residue. Sealant to dishwasher has mold. Holes in wall by walk-in coolers and back door. Corners of walls have sheet rock falling off. Lights by walk-in cooler have no light shield. Employee personal items stored with utensils and near food prep areas.

Cooler’s doors need regular cleaning, and interior of condiment holders need thorough cleaning. Outside of bulk storage containers have food debris.

No handsoap in women’s restroom. No paper towels able to be dispensed in men’s restroom. Restroom hand sinks and kitchen hand sinks need cleaning frequently. Containers of hot dogs in reach-in cooler and walk-in cooler, containers of chili in walk-in cooler that are not date marked with make date, or seven-day discard date. Single-service items such as straws and condiment packages stored in containers, or reach-in stainless steel storage racks with food debris and residue. Equipment sides, under prep tables, outside of cooler doors, outside of bulk storage containers, ladder near bulk storage containers and other nonfood contact surfaces has food debris, residue, trash. Restroom facilities need cleaning. Floors damaged allowing water entry near ice cream coolers and back door. Clean all walls and dirty ceiling tiles frequently. Floors need thorough cleaning due to food debris in dry storage and near back door area.
