Kitchen inspections for July 13-15

The following are among the food service establishments inspected from July 1-15 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Prep cooler holding foods at 56 degrees F. Cheese dip on ice at bar at 50 degrees. Pans of cheese dip in RI bar at 80 degrees F. Tub of salsa out of room temperature needs a time label if using time as a control to hold food. Tubs of cut tomatoes sitting out on top ledge or prep cooler needs time labels. Need a food probe thermometer to take hot and cold internal temperatures of foods. Bucket of margarita mix and containers of chips on floor. Heavy accumulation of food, grease under equipment and shelving at cook line. Dirt and debris under air drying and utensil storage rack. Vents have dust above cook line. Lights not working at three-compartment sink area need repaired. Lights up front need proper end caps.

Sanitize level under 50 ppm at beginning of inspection — changed out sanitizer and ran sink again. Gaskets with accumulation of mold, mildew.

Repeat violation: Two hand sinks with no paper towels and employee restroom with no soap. Most items in coolers not covered. Soda dispenser nozzles with heavy accumulation of mold, mildew. Raw meats and vegetables on "Hibachi Bar" all out of temperature. No date marking system in place. Repeat violation: no thermometers in several coolers. Foods left in opened cans. Cooks not wearing hats, nets, etc., no nets at restaurant. Gaskets on makelines have a large residue of food, water and mold, mildew; some are dry, cracked. No covered waste containers in ladies room and employee restroom. Grease container dripping on surrounding area. Floors throughout need better cleaning
