Kitchen inspections for Dec.4-6

The following are among the food service establishments inspected from Dec. 4-5 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below.

Inspections (frequency of) a food service establishment are conducted based on risk categorization.
The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate.

When a restaurant changes ownership, a new food service permit must be issued.

To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance.

Permits must be posted in public view at all times.

Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment.

Pizza Hut

Plates stored beneath hostess pedestal and has food debris that has fallen onto plates. Walk-in freezer has condensate accumulated on pipes and dripping below onto boxes of food below. Walls near hand sink at warewash area, walls at warewash area, area near Coke dispenser on right hand side, outside of shakers above prep cooler and outside of cooler doors have food debris or soiled. Dumpster area has trash on ground. Dumpster doors weren’t closed. Lights above salad station are peeling and one had food debris on bulb.

Internal wash solution temperature at dishwasher that uses chlorine sanitizer is less than the minimum required temperature of 120 degrees per manufacturer of dish machine and Georgia State Rules and Regulations (temped at 90 degrees). Several hand sinks reaching temps that range from 85-112 inconsistently meeting required hot water temperature of 100 degrees, or more when other fixtures are in use. Hand sink also needs mixing valve adjusted to prevent scalding of staff’s hands. Clean floors well beside all equipment (proofers, freezers). Food debris in corners and along equipment. Many coving tiles need sealed to wall to prevent water/food debris or possible pest harborage.
