Kitchen inspections for April 9-16

The following are among the food service establishments inspected from April 9-16 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Final rinse pressure for hot water sanitizing dish machine does not stay at required 15 to 25 psi during rinse. Trash Dumpster (and cardboard dumpster) missing required drain plug.

El Maguey Mexican Restaurant

Score: 85, Grade: B
Foods uncovered in coolers, inside drawers — taco shells laying on shelf under steam unit. Utensils with debris; cutting boards with heavy mold; dirty dishes left from night before. No dates on foods. Repair/replace rusty shelf under prep table. Raw wood behind hand sink — floor in walk-in cooler coming apart at seams. Clean all shelves and inside drawer beside fryer. Walls peeling paint and frp damaged beside steam unit and across from walk in coolers. Replace missing light shield under hood.

Most of the spatulas hung on rack over prep table for use are badly worn, frayed and cracked. Wall behind pre-wash sprayer in dish room is mildewed. Light covers in dish room are dusty. Evidence of rodent activity in dry storage.

Walk-in cooler evaporator drain is still leaking into pan kept underneath drain. Walk-in freezer evaporator drain with large ice formation on drain pipe. This water is nonpotable. Wall fan pointing to serving line area is very dusty.

Score: 92, Grade: A
Scoops stored with dried food debris under “swing” arms. Tongs stored in metal container with lid for allowing students self-service for jalapenos laying in container with jalapenos. Cold water faucet at hand sink leaking heavily at base (attachment to sink) needs to be fixed. Wall mounted fan over clean side of dish table in dish room is very dusty. Floor needs a good cleaning around washing machine and dryer in laundry room — accumulation of lint/dirt and towels around machines.

Employees putting on used disposable gloves without washing hands. Salad bar not holding required temperatures — ice bath not effective — containers should be at least partially submerged in ice bath to keep temperatures down. Wraps at 94, 97, 104 F. Sausage from breakfast at 9 a.m. still 71 F at 11:30. Employees without hair restraint. Pans, utensils, dishes, etc., stored wet. Dispensing tubes of bulk milk containers too long. Drawers in kitchen need cleaning. Tubing and drain trays on soda dispensers have mold, mildew. Interior of milk dispensers need detailed cleaning. Counters under, on drink stations need detailed cleaning. Floor in dry storage needs better cleaning. Walls by bag in box area need syrup splashes, etc. cleaned. Clean walls more frequently.
