Kitchen Inspections for April 12-25

The following are among the food service establishments inspected from April 12-25 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. The Dawg House

Score: 67, Grade: U

Hands not washed between glove changes or when putting gloves on to work with food. Talking on phone and then putting on gloves to work with food, handling chicken with gloved hands, removing gloves and putting on new pair of gloves. No paper towels at hand sink in at start of inspection. Roll of paper towels taken out of restroom to use in kitchen, then no paper towels in restroom. Knives, cutting board (silicone) rinsed in three-compartment sink for use. No thermometer available for monitoring the temperature of cold held foods; only a meat thermometer available. No test strips for monitoring the amount of sanitizer required for proper sanitizing of food-contact surfaces. Three-compartment sink still needs a good scrubbing. Clean out inspection ports (outside) need new caps to provide water tight access. Clean out in bathroom (outside) is leaking. All fluorescent fixtures over food-handling area/cook and prep, without proper shielding.

Drinks in kitchen in plastic cups and travel mugs. Food handler working with cleaver, cutting up chicken, rinsed cleaver in sink; wiped on apron and hung it on knife magnet. Wiped prep table with dry cloth. Dishwasher not reaching required wash temperature of 120 degrees. The outsides of coolers: doors, handles, lids and handles, all need to be cleaned more frequently to prevent build up of food debris, that can contaminate hands. The sides of the fryers and under grill, cook line with accumulation of grease (dripping). Gas lines with build up of grease.

Employee drinks throughout entire kitchen and wit area, not properly covered. Fajita beef and onions (cooked) on top of steam line with temps at 111 degrees. Container of spices sitting on floor, with employee sitting on top of container texting on phone. Cloths used to wipe food-contact surfaces tucked into employee pockets and laying on counters. Evaporator from cover in reach-in cooler (upright) with extreme mold,dripping condensate leak.
