Kitchen inspections Feb. 8-11

The following are among the food service establishments inspected from Feb. 8-11 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. The rules and regulations are also available online. Do not store brooms, etc. alongside ice machines where dirt, etc. can collect around broom. Ceiling vents (return vents) need better cleaning.

Plumbing from icemaker not routed to an indirect drain. Non potable water plumbed to drain into walk-in floor from cooler motor. Stainless steel floor patch in walk-in cooler must be sealed to existing floor; stainless steel behind cook area sealed with duct tape. Floor under equipment, etc. have water, food, trash, etc.; cove molding no longer attached in most areas — repair immediately; old equipment stored inside.

Washed and prepared (cut-up) squash stored back in shipping box. Many cooked food items stored in grocery bags in freezer. Coolander, hotel pans, veggie peeler, carrot chopper all stored with dried food debris on them. Dirty cloth laying on in-use cutting board on prep table. Homestyle can opener with large accumulation of food debris build up on blade. Sanitizer container for storage of cloths for wiping food contact surfaces with large build up of food. Grease container with rubbery grease residue, buildup that appears to be not easily removable (can’t scrape off) with available methods. Floors still need better cleaning at floor/wall juncture behind grill; 3-compartment sink, under front counter and refrigerators — accumulation of food, grease, and trash. Some floor tiles have "shifted" under 3-compartment sink and floor/wall juncture is not sealed without tiles tight at wall. Breakfast meats cooked to required temperature, meats lose temperature in drawer due to drawer kept open for long periods of time with volume of business.
