The following are among the food service establishments inspected from Dec. 28-30 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Papa’s Pizza To Go

Score: 85, Grade: B

Ice machine had mold, mildew in back kitchen. Food on top of pizza prep cooler not less than 41 degrees F. Pans, cups, and other utensils stored wet. Aprons stored on shelf with personal items (coats, etc.) and must be kept in clean area. Dumpster area had garbage around dumpster and dumpster door open. Hood above pizza oven needs maintenance due to bubbling and grease, dust needs to be removed.

Shelled eggs used for food prep this morning placed back in the walk-in cooler and unable to rapidly get back to less than 41 degrees F. Knife holder rack has food residue and wall behind it needs cleaning. Sugar container is sticky and needs thorough cleaning to prevent possible contamination.

No soap at kitchen hand sink, keep properly stocked to promote proper hand-washing practices. Accumulation of food residue on can opener, slicer attachments, and drink dispenser nozzles. WI freezer leaking. Racks in WI cooler have accumulation of dust or debris. Hydraulic system beside ware washing machine has accumulation of grease and debris. Accumulation of food debris along feet of racks, rack wheels and along floor/wall juncture in WI cooler.

Loose trash on ground in dumpster area; grease containers have grime alongside — trash needs to be picked up more frequently if piling above top of container.

Ice maker baffle had mold, mildew. Containers stored with grease on exteriors. Walk-in freezer leaking condesate on top of food containers. Remove all food items from under condesate to prevent possible contamination. Nonfood contact surfaces (chest freezers, gaskets on all coolers and freezers) had food residue and grease. Ceiling tiles have heavy accumulation of dust by walk in cooler. Grease along the wall at cook areas, trash under shelving in dry storage.

No certified food safety manager. Dish machine not dispensing sanitizer — dirty dishes left overnight. Label all bulk items (flour, sugar, Msg, etc.). Post most current inspection and post hand-washing signs at all handsinks. All shelves, outside and tops to bulk food containers, sides of fryers, inside and outside of coolers and freezers, door seals all with food residue — fans dusty — clean all shelves in entire facility and clean fans. Tops on dumpster missing. Floors with heavy grease, food accumulation under fryers — clean floors in entire kitchen and inside walk-in cooler; clean walls behind dish area and in walk-in cooler.

Tomato slicer stored with dried food debris. Cheese sauce and chili heating in a hot-holding appliance. Storage on floor. Floors throughout have food debris, grease, trash, especially under equipment and counters; pallets to raise supplies above the floor have not been moved to clean underneath. Employee clothing, belongings stored with food and single serve items.

Frozen ground beef in standing water. Replace missing thermometers in coolers. Shelves need cleaning underneath grill — clean sides of grills, gas line and inside beer cooler. Wall behind 3-comp sink moldy and peeling paint; resurface or place frp behind sinks; repair damaged wall next to steam unit, behind chest freezer (and mop sink) and side panels in walk-in cooler; replace damaged floor tile in front of walk-in cooler. Also regrout tiles where grout is missing — clean ceiling tiles and vents in bar area and replace damaged ones. Lights in bar not working.
