The following are among the food service establishments inspected from Aug. 6-21 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Multiple food items, on both sides of reach-in cooler (tops), were over 41 degrees F. Temps ranged from 45-65 degrees. American cheese can be controlled using time instead of temp; viewed written policy. Other food items must be 41 degrees or below. Gaskets and outsides of lowboy coolers with grease and food debris.

Score: 78, Grade: C
When questioned, PIC did not know how to set up 3-compartment sink or how to properly cool cooked foods, and did not have a thermometer to monitor cook temperatures. Personal beverages stored in plastic drink bottles in reach-in cooler. Rice cooker lid with food debris. Dishes not being sanitized following washing and rinsing steps at 3-compartment sink. No sanitizer sink set up for sanitizing dishes. Chicken wings to be cooled in walk-in in Lexan container, too full to be cooled properly within the time frame. Did not have a thermometer for monitoring temperature. Did not have most recent inspection report displayed. Ladle placed in container of rice in walk-in cooler with handle resting in food. Lid of chest freezer storing raw chicken wings has one hinge broken and gasket coming loose. Did not have sanitizer solution testing strips to test concentration of solution for sanitizing step at three-compartment sink. Screen door at back entrance has gap at bottom of about 2 inches.
