Kitchen Inspections
The following are among the food service establishments inspected from Aug. 13-18 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Many lights burnt out, dim or not working throughout food service areas to where equipment and utensils are in dark places that cannot be adequately assessed for cleanliness.

Food employee cooking at stove with personal beverage on preparation surface. Caesar dressing in walk-in cooler with mold accumulations. Debris on the meat slicer that had been left there for several days. Deviled eggs stored in the prep-top cooler and sliced melon stored in the one-door standing cooler being cold held at temperature above 41 F. Time-temperature control safety items (tartar sauce, Caesar dressing, etc.) that had been prepared in the establishment and stored for over seven days. Lettuce stored in the preptop cooler that had reached its expiration date of Aug. 8. Soiled dished comingled with cleaned dishes stored on the same rack. Pooling water in the bottom of the reach-in cooler where from leaking condensation.

Both drink dispensers located in the drive- thru and lobby also had heavy accumulation of mold inside of their nozzles. Dumpster side door open, and cardboard dumpster with top lids open.

Produce and soiled dishes placed on top of and within hand sink. Bottles of salsa stored in merchandiser cooler at temperatures from 52-61 F. Ground beef that Person in charge stated had been cooling for one hour in container with too much depth relative to the depth of the food contents.
