The following are among the food service establishments inspected from Nov. 9-15 by the Hall County Health Department.

The department scores on a 100-percentile scale, with 85 and above considered passing. Kitchens are inspected at least every six months and are required to post their score sheets in public. A new establishment that has never served food must score a 100 to receive an initial report.

Employees smoking in kitchen. Ashtrays with cigarette butts in store room. Food stored under leaking compressor in walk-in. Surfaces, drains and drink dispenser nozzles have build up of mold and mildew. No thermometers for cooks to test temperatures of foods.

Score: 88

Vents over fryers with dust accumulation. Reach-in cooler struggling to maintain temp of 41 degrees or below. Ice built up on condenser. Test strips used to check levels of sanitizer missing. Leak in water pipe above three-compartment sink. Floors underneath and beside fryers with heavy grease accumulation. Floors need to be cleaned. Ceiling tiles and vents with dust and mold. Coved baseboard, floor tiles and areas of FRP around walk-in cooler damaged, pulling away from wall. Light shields broken near grill. Shields missing at light near drive-through. Bulb in walk-in freezer not shatterproof.

Four-door cooler still with small amount of condensate leaking into unit from evaporator. No storage under leak. No sanitizer test strips (chlorine) could be found in restaurant. Thermometers missing in cooler and freezer compartments of homestyle refrigerator. Dumpster drain plug missing. Plastic wrap stuffed in hole. Dumpster needs to be placed on a concrete or asphalt surface that is smooth and allows for easy cleaning of spills, etc.

Missing thermometer in prep cooler in inside concession. Concession trailer needs a stem thermometer to monitor hot-holding temperatures. No cloth sanitizer bucket set up to store cloths used to wipe possible food spills on concession trailer. Fluorescent lights need to be shielded in concession. Concession trailer with many damaged screen panels.

Biscuit Shop, 1724 Parkhill Place, Gainesville

Score: 73. Failing inspection.

Margarine container used as scoop for flour. Floors need detailed cleaning at floor and wall junctures. Painted wood ceiling beginning to peel over hallway. Ceiling vent in kitchen without cover. Vent is open to roof. No screen on back window over three-compartment sink. Food handlers not wearing hair restraint. Food handlers wiping faces and hands on aprons.

Cutting boards in need of cleaning. No thermometer in freezer. Cleaning cloths on appliances, counters, etc. Floors need better cleaning under equipment. Food and dirt accumulated under mat in hall.

Score: 99

Freezer threshold damaged, allowing for gap under door that creates condensation problem in freezer.

Score: 90

Large, five-gallon container of stew that has been cooked was being put into cooler to cool after cooking. French fries stored in black trash bag in freezer. Kitchenware not being sanitized after washing and rinsing at three-compartment sink. Three compartment sink set up without sanitizer step. Cook tucking cloths in apron string that are being used to wipe hands after hand washing as well as "pot holders." Floor still needs a little better cleaning behind hot water heater. Floor tiles buckled under cooking equipment. Coved baseboard damaged in dry storage and wait station.

Score: 97

Three-compartment sink set up and being used without sanitizer in sanitizing compartment. Sink had been filled, but after filled, sanitizer had not been added and dish washing began before sanitizer added.
