The following are among the food service establishments inspected from Feb. 15-22 by the Hall County Environmental Health Department. New rules and regulations for food service began on Dec. 1, 2007. Food service establishments will now be given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment will be conducted based on risk categorization. The risk type shall be determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Bowl of imitation crab in freezer without wrapping. Pot of beans in cooler over three hours and temperature of beans 109-111 degrees. Cooked beans and rice on counter from cooking five hours earlier and when ordered, portions are reheated in microwave. A steam table is needed.

Food handler taking bite of food after putting food in hot box and then going back to work without washing hands and changing gloves. Slicer stored with dried food debris on back of blade. Several knives in rack with dried food on blade and ice machine baffle with large build-up of mold and mildew. Two and a half No. 10 chubs of hamburger with use-by or freeze-by date expired. Fat back rinsed off in two-compartment sink where carrots ready for peeling were in bus tub in the other compartment. None of the cloths used to wipe counters (prep tables) and equipment surfaces being held in chemical sanitizer solution between uses. Bucket containing clean whisks sitting on floor right next to hand sink in prep/cook area. Catering containers stored on shelving that needs cleaning in outside dry storage shed. No covered trash container in women’s restroom. Floor needs better cleaning at floor and wall juncture and around legs of shelving in dry storage. Plastic lenses over fluorescent light fixtures damaged over prep tables in cook and prep area.
