Kitchen Inspections Sept. 22-29

The following are among the food service establishments inspected from Aug. 22-29 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. The person in charge of the food service staff was unable to explain the proper procedure for setting up a three-compartment sink to wash, rinse and sanitize utensils. They were also unable to state the temperatures required for cold/hot holding, internal cooking temperatures, or the time and temperature parameters necessary for cooling. Upon arriving into kitchen area, the inspector observed an employee eating while cooking tortillas on stovetop. The employee then placed the half-eaten food on the same plate as ready-to-eat tortillas.

Score: 91, Grade: A

Employees were observed touching their faces and adjusting glasses, hair nets with gloved hands while assembling plates of food. An employee was observed removing a cooked burger from the skillet and assembling a burger (buns, beef, lettuce, tomato) using their bare hands.

Employee water bottles, cups observed on shelves, counters, and containers throughout kitchen areas. Front ice bin left open when not in use, the lip of counter above bin passes over ice with high potential for contaminants to fall into ice.

Score: 90, Grade: A

Observed unattended prep area in back with partially made tamales and ingredients out on the counter, all measuring at unsafe temperatures; corn paste 114 F, cooked pork 122 F and partial pan of folded tamales 101 F.

Cheddar’s Casual Cafe

1195 Dawsonville Highway, Gainesville

Score: 75, Grade: C

Time/temperature control for safety food at cold-hold drawers under grill, salad prep station, breading station and expo station with temperatures above 41 F. Items cooling in walk-in on ice not completely submerged in ice bath, cooling too slow to meet proper cooling parameters. Flooring under bar observed with buildup of garbage and debris.

Raw shell eggs were held at 52 degrees Fahrenheit in the prep top cooler. Multiple cold holding units had heavy food buildup on the interior and exterior surfaces.

An employee cellphone was observed stored beside the kitchen batter station on a shelf used for utensil storage.
