Kitchen inspections, May 23-29

The following are among the food service establishments inspected from May 23-29 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processes performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Also stored above ready-to-eat food, such as cooked macaroni noodles. Raw chicken on prep table cold-hold in ice bucket. Observed Walmart grocery bag filled with ice on top of raw chicken to aid cold-hold. Recent food inspection was not on display. Knives stored in holes in storage shelf next to hand sink by stove in kitchen. Observed splash stains on blades. Metal pans by three-compartment sink cleaned but stacked wet.

Sliced lemons uncovered in two-door refrigerator on cook line. Sliced tomatoes uncovered in walk-in cooler and delit and cakes uncovered as well. Can opener, knives, utensils in drawers, slicer with food residue. Tuna salad, chicken breasts, cooked rice, tomatoes, watermelon in cooler without discard date. Sugar and flour container without proper labels to identify product. Lemons uncovered and stacked on top of one another. Deserts in walking cooler not completely covered and stacked on top of each other. Most recent inspection report not displayed. No handwashing signage displayed in employee restrooms. Leaking pipe in freezer. Shelves, stoves, drawers with food debris. Garbage area observed with trash accumulation. Food debris observed on floor and walls and a leaking ceiling in dry storage.

These boxes are not sanitized and could possibly contaminate foods. Food handlers not wearing hair restraints. Cloths used to wipe food-contact surfaces lying on prep counters not in sanitizer. Pans stacked wet on shelves. Walk-in freezer with heavy leak at condenser unit creating large amount of ice. Ice buildup around door. Cabinet at wait area underneath hand sink beginning to decompose. Sides of fryers, carts, shelves, outsides of bulk-food containers all with food/grease accumulation. Floors underneath grill area, dish area, walk-in cooler, at all floor/wall junctures with food accumulation.
