The following are among the food service establishments inspected from Sept. 28-30 by the Hall County Environmental Health Department.
Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization.
The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times.
Food service establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Floor needs cleaning under two-door glass front cooler. Floor paint worn off in bar exposing bare concrete. Baseboard in both stalls in men's restroom need repair; some is missing and the rest has come unfastened from wall. Walls need cleaning around dough prep area; dried dough and oil. Floor under bar needs cleaning; bottle caps, cups and debris.

A single-service beverage cup with a secure lid and straw handled to prevent contamination of hands and container, as well as food, equipment, utensils, linens, etc. is allowed in the kitchen. Potentially hazardous food items stored in warmer in kitchen and in chafing dishes in service (dining room) area not maintaining required hot holding temperature of 135 F or above (110 F-129 F). Hot holding cabinet in kitchen has had problems in the past holding foods at required temperature; have checked or replace. COS foods in hot holding cabinet in kitchen reheated to 165 F. Foods in chafing dishes were discarded as lunch service was almost finished for the day.

Employees prepping food without hair restraint; all employees handling food an any capacity must wear a hat, hair net, etc. Gaskets on make line and walk in badly damaged; replace to provide smooth, durable, easily cleanable surfaces. Sinks not sealed to walls; reseal all sinks to prevent water running behind. Cutting boards need to be replaced or resurfaced. Warewasher needs cleaning inside and out; must be cleaned at least once each 24 hours. Equipment, tables, shelves, etc., need detailed cleaning; clean all surfaces often enough to be free of accumulations. Floors throughout, walls throughout, ceiling all need much better cleaning; clean all surfaces often enough to stay clean.
