Kitchen inspections for May 3 - 10

The following are among the food service establishments inspected from May 3-10 by the Hall County Environmental Health Department.
Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization.
The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate.
When a restaurant changes ownership, a new food service permit must be issued.
To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times.
Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment.

Mop sink needs to be sealed to wall at right side to keep food, trash from accumulating in crack between mop sink and walk-in cooler. Lids of rolling containers under prep table very greasy, dusty — need more frequent cleaning. Fluorescent lights over serving line with food splatters — need more frequent cleaning. Mops, brooms stored at back door with dirt, water accumulating in brooms and mops leaning on building. Properly store maintenance equipment. More detailed cleaning needed of floors under dishmachine (under, around pipe that lays on floor), in corners, floor/wall junctures. Clean ceiling tiles around wall fans where debris has been accumulating.

Scoop in sugar container encrusted with tea-stained sugar.
Shake collars being stored in running water dipper well that is not flowing enough to allow food particles to float off. Leftover hamburgers used for chili. Already prepared chili and mushroom sauce without date labeling in walk-in cooler. Bleach bottle under preparation sink with label torn off.
Pre-labled bottle for degrease filled with window cleaner in dry storage. Bottle of degreaser on prep table next to grill, bottle of bleach on drainboard next to prep sink. Thermometer broken in reach-in cooler under oven. Food handler without proper hair restraint. Opening inspection from over a year ago is still posted for public viewing.
