The following are among the food service establishments inspected from July 24-25 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Chess freezers have damaged access doors. Chess freezers have food debris on outside, and food stored inside exposed opening in bottom (i.e. buns, fries, etc.). Grease on outside of equipment. Hand sink in kitchen faucet leaking while hot water turned on, and drip still occurring when hot; water handle turned tight. No hot water at hand sink in kitchen. Floors have food debris, trash, grease under equipment, at floor wall junctions, near floor drains.

Cherries in Coke glass cooler uncovered. Noodles near wok uncovered. Dishwasher not sanitizing utensils. No color on test strip. Slicer not clean to sight and touch. Has food debris (blade top). Garlic in oil at 71 degrees from (cooler 40 degrees) in and out. Must hold at less than or equal to 41 degrees, or use time as public health control. Cool potentially hazardous food from 135 to 70 in two hours, and 70 to 41 in four hours for total of six hours by monitoring with thermometer, and using shallow pans, ice baths, small portions, freezer or other effective methods. Several buckets of sauces stored on floor in kitchen. Gasket on glass Coke cooler needs replacing.

Cardboard boxes and fry bags used on table surfaces; very greasy, with food debris, etc. Nearly all equipment surfaces, including hood system, have grease, dust, etc. Grease on top, sides and front of grease collection container. Accumulations of grease, dirt, food on floors and walls.

Gaskets on pizza make line and walk-in damaged. All sinks need to be resealed to walls to prevent water running behind. Most surfaces have flour, grease, etc. Floors and walls all need much better cleaning, much more frequently to prevent insect, rodent attraction. Cove tiles and plastic cove molding need repair, resealing to wall to provide smooth, durable, easily cleanable surfaces. Mosquitoes, drain flies and house flies present on walls and other surfaces.
