Kitchen inspections for Jan. 7-26

The following are among the food service establishments inspected from Jan. 7-26 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times.

Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. The rules and regulations are also available online.

Food employee did not wash hands between changing tasks. Frosty mix not at requited cold holding temperature. Cheese at small make-line coolers not at required temperature. Pans stacked wet. Gloves not being removed between different tasks. Walk-in freezer has frozen condensate on majority of ceiling and ceiling parts.

Damaged cutting boards, containers, tops to containers. Raw wood planks under dish machine. All shelves and outside of floor mixer need to be cleaned and kept free of food residue. Floors with debris underneath equipment need to be cleaned. Ceiling tiles dirty in back of kitchen and several wrong type. Walls with food splatter in back of kitchen and paint, sheetrock peeling. All light bulbs at food bar areas need to be replaced with a shatterproof bulb. Missing glass globe underneath front hood needs to be replaced. Replace broken light shield next to walk-in freezer.

Some foods stored uncovered in freezer. Bowls and plates had food debris on shelf by food prep table. Knives stored in cup with markers and pens. Bowls at food prep tables need inverting to prevent possible contamination. Single service items (box of napkins, cups) in box on floor at dry storage. Broken containers and cups used for storage of utensils. Cardboard and wood in hot box in kitchen on bottom left side. Electrical tape used on cold hold bar near register beneath and tape used on stove handle. Gaskets on reach-in freezer split. Gaskets on walk-in coolers split and damaged. Gasket on sliding door cooler needs replacing, repairs. Exposed wood in walk-in cooler and stainless steel damaged. Nonfood contact surfaces on hot box near fryer, heat lamps for fries, and interior of cooler and freezer needs thorough cleaning. Ceiling tiles in office, food storage leaking, damaged. Metal strips rusty or sagging. Linoleum in office, food storage damaged and needs to be removed. Wood frame at door for office, food storage damaged and paint peeling. Vent in storage area and kitchen needs cleaning of dust, debris. Ceiling sagging in kitchen and paint peeled. Floor tiles in kitchen and dry storage missing or broken. Lights in kitchen not shielded and some not properly shielded with well-fitting sheath with endcaps. Light shield in kitchen cracked.
