Kitchen Inspections for April 2-10

The following are among the food service establishments inspected from April 2-10 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Onion rings in box stored on floor near fryers. Cloths used to wipe food-contact surfaces laying on counters, prep tables throughout kitchen. Grease, dust accumulation on shelf holding clean utensils.

Checkers Drive-In Restaurant

Score: 82, Grade: B

Many single-serve cups without lids and straws and bottles of water in food prep areas. Hand sink blocked by empty 5-gallon container with management papers on top. Chicken patties hot-holding in drawer at fryer (manager could not tell how long) with temperatures 109-115 degrees. Vegetable prep sink filled with dishes. Top of grease container in parking lot has buildup of grease next to lid. Grease container in dumpster enclosure is not closed. Floor needs a good cleaning in dry-storage building behind restaurant. Accumulation of trash, dirt under shelving. Area behind drive-thru register and soda dispenser needs a good cleaning. Accumulation of trash. Personal items: purses, jackets, on chair in cook area and on top of bag-in-boxes.

Food handler not washing hands between glove changes to handle food. Washed and prepared broccoli stored in a cardboard box in the three-door cooler. Raw chicken stored over raw beef, cooked low mein and shell eggs. Two-door sandwich unit at cook line with most foods stored uncovered inside. Most containers with buildup of food residue. Both rice cookers with buildup of food residue inside. Hand-style can opener with buildup of grease, food residue on blade. Cloths used to wipe food-contact surfaces laying on prep surfaces throughout kitchen. Reach-in cooler gaskets, shelving, cooler handles, outsides of coolers, hood vents dripping grease.
