Kitchen Inspections: Feb. 6-12

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. The rules and regulations are also available online at dph.georgia.gov/environmental-health-inspections.

The following are among the food service establishments inspected from Feb. 6-Feb. 12 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

No paper towels in paper towel dispenser at hand sink on cook line at start of inspection. Can opener found with significant build-up of food debris and metal shavings. Three-compartment sink set up without sanitizer; kitchenware and utensils were being washed and rinsed and put up to air dry. Yellow squash, tomatoes and okra and mashed sweet potatoes all holding at hot bar found with temperatures below required 135 F for hot holding. Hot water in steam table only reaching 134 F; thermostat turned up and lunch service started. Pot pie filling cooked and leftover from yesterday found in large stock pot on floor in walk-in cooler with temperature of 47 F-48 F degrees after cooling overnight. Large pot of leftover pot pie filling found stored on floor in walk-in cooler. Wiping cloths used to wipe off food prep surfaces and prep tables in use found, but no sanitizer solution set up to store the cloths in between uses. Clean and sanitized flatware and utensils on trays found being stacked on drain board of vegetable preparation sink. Chemical sanitizing dishwasher was not reaching required wash temperature of 120 F. Floor needs a good cleaning under cook line.
