Kitchen inspections, Dec. 7-15

The following are among the food service establishments inspected from Dec. 8-15 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: "A" (90-100), "B" (80-89), "C" (70-79), "U" 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment. A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a food service permit for a change of ownership, the establishment must score a 95 (A) or above with all Foodborne Illness Risk factors and Public Health Interventions in compliance. Permits must be posted in public view at all times. Food service establishments with drive-through windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Copies of the rules are available at the Hall County Environmental health Office. The rules and regulations are also available online. Score: 84, Grade: B
Employee touching onions, bread, etc. with bare hands. Slicer, tongs knife with food residue. Repair broken splash guard at mop sink. Clean inside ovens and drawer cooler unit. Tops to dumpster open and trash on ground around dumpster. Walls and floors underneath, behind equipment with food residue and need cleaning. Replace missing light shield on light in kitchen and repair light in front of walk-in cooler that is not working.

Employee putting hands into sanitizer bucket to get cloth, wiped surface, put cloth back into bucket then proceeded to touch foods with hands wet with sanitizer. Box of single service items on floor need to be 6 inches off floor. Repair condensate leak in walk-in freezer - remove torn contact paper that is on shelves. Shelves in kitchen and in walk-in cooler with debris and need to be cleaned. Floors with heavy grease accumulation underneath fryers, grill - dust on ceilings throughout kitchen.

Chemicals stored next to and on top of foods in dry storage. Shelves in coffee bar with food residue. Floors, walls moldy in dishroom - floors peeling, pitting in kitchen area - area behind oven has been repaired numerous times and still damaged.

Bottle of apple juice on biscuit table in prep area. Trash bags used to store bread crumbs from cornbread to make dressing. Foot items on serving line (hot bar) and stored in hot holding cabinet not being held at required 135 degrees or above (86-125 degrees). Many of these items are held in oven that many not be kept heated enough and then transferred to hot holding cabinet and finally put on steam line for service. Leftover sausage patties from breakfast in walk-in cooler right at six hours not cooled to 41 degrees (58-62 degrees). Rolling container of sugar not labeled. Dumpster missing drain plug that keeps liquid in container and insects, rodents out of container. Grease container with lid left open. Cell phone on shelf above prep area in kitchen.

Cloths on prep cooler not stored in sanitizer between uses. Cloths for wiping tables stored in container of solution not measuring any sanitizer level - solution dirty.

Final rinse pressure for hot water sanitizing dish machine over required 15-25 psi - running 40 psi. Sour cream, buttermilk in reach-in cooler and sour cream container in walk-in cooler past sell by date. No sanitizer test strips for type sanitizer being used. Painted floor in bar very worn.

Hand sink in cook area with dirty knives piled in sink. Outdated yogurt in walk-in cooler. Large container of cream sauce in cooler to cool with too much product to cool rapidly. Floor in dry storage needs better cleaning around legs of shelving and at floor/wall juncture. Ceiling panels moldy, mildewed, especially in dishwashing area.

The Bright Spot

Score: 98, Grade: A
Door gaskets on reach-in coolers - grill and Chick-Fil-A - are torn on top. Cutting board at makeline cooler in grill heavily scarred, both sides. Floor needs cleaning in grill area, under pastry case and make-line cooler - food debris and dirt have accumulated under units and on floor in crack between pastry case and counter.
