The following are among the food service establishments inspected from Aug. 28-Sept. 3 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.
A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. Dispensers holding clean single-service lids and spoons have heavy food debris buildup. Nonfood-contact services of equipment should be cleaned at a frequency necessary to preclude accumulation of residue.

Ice machine found with mold and mildew on baffle. Tongs, slicers and can opener found with food residue. Plastic Lexan containers found with a layer of grease and oil on outsides. Clean all items and check for cleanliness before storage. Prep sink that is designated for washing vegetables only was found with debris and food residue in sink; this sink is for washing vegetables only and no other activity should take place in this sink; clean and sanitize sink. Condensate leaks in walk-in cooler, walk-in freezer and dessert cooler found at drive through area; have repaired and do not store any foods underneath or in this nonpotable water. Shelves in prep areas, outside coolers, freezers and floor fans found with food residue. Area with compressor unit underneath ice cream machine was found with very heavy grease and food residue. All areas must be cleaned and kept clean to prevent insect and rodent attraction. Floors in entire kitchen, inside walk-in coolers and freezers found with food accumulation, especially underneath equipment and shelves. Trays of Dilly Bars in the walk-in freezer were stored uncovered. All foods must be stored covered to prevent contamination. Boxes of bananas, onions and single-service items were stored on the floor in the dry storage area. All food and food service products must be stored 6 inches off the ground to prevent contamination. Food handler was wearing bracelet and pronged ring. Food handlers may not wear any jewelry other than a plain band ring. Tongs were stored on hot holding drawer handle. Lid of plastic container was used as a scoop in bin of Oreo crumbles. Scoops must have a handle, and handle must be above the food product. Floor of walk-in freezer under shelving and drive through cooler had heavy accumulations of food debris. Clean all equipment regularly and at a frequency that will prevent accumulations. Floor under fryers and under equipment at drive through area had heavy grease buildup. Clean floors regularly to prevent the buildup of grease and food which attracts pests. Light bulb in reach-in freezer (holding cakes) was broken. Replace bulb with a shatterproof bulb to ensure food is protected from physical contamination.
