Kitchen Inspections

The following are among the food service establishments inspected from Aug. 1-7 by the Hall County Environmental Health Department. Food service establishments are given a letter grade that coincides with a percentile: “A” (90-100), “B” (80-89), “C” (70-79), “U” 69 and below. Inspections (frequency of) a food service establishment are conducted based on risk categorization. The risk type is determined by the menu items served, the food preparation processed performed, and the previous food safety history in the food service establishment.

A new food service establishment that has never served food must score 100 (A) to receive a food service permit to operate. When a restaurant changes ownership, a new food service permit must be issued. To be issued a permit for a change of ownership, the establishment must score a 95 (A) or above with all foodborne illness risk factors and public health interventions in compliance. Permits must be posted in public view at all times. Establishments with drive-thru windows will also be required to have the top one-third of a copy of the most current inspection report visible through each window allowing customers to easily read the score, date of inspection and establishment information, in addition to the copy posted inside the establishment. American Deli

Score: 66, Grade: U

Raw beef patties stored in reach-in cooler next to ready-to-eat items like cheese and lettuce. Raw fish and raw ground beef stored on shelf above broccoli and bell peppers in walk-in cooler. Mold, mildew in ice maker. Food debris on meat slicer. Cooked chicken wings being hot held in fryer basket over fryer. Temped at 115 degrees F. Items prepared on-site and in opened packages held over 24 hours not being date-marked. Unlabeled bottles of cleaning chemicals on racks above vegetable sink. Unlabeled bottles, Raid, and cleaning sponges stored on wire rack above vegetable sink. Tongs being stored in standing water only on prep table.

Chicken pieces and Philly cheesesteak in pans inside pan of hot water hot holding on flattop grill with temperatures of 114F-118F. Vegetable slicer mounted on drainboard next to sanitizer compartment at three-compartment sink. Employees restroom needs a covered trash receptacle — get a lid for current trash container or replace with lidded container. Grease container that is apparently no longer in use (“new” one in dumpster enclosure) is full of grease, trash and grease is on ground around container. Employee’s purse on shelf with food storage in cook area.

Tomato slicer and can opener with food debris. Ice maker with mold, mildew behind baffle. Leak from vent in walk-in freezer has caused ice to form on boxes of food. Food may not be stored under source of leaking water. Two employees handling food and wearing bracelets. Food handlers may only wear a plain band ring. Handles of coolers and equipment with grease and food debris. Floors underneath equipment, walls behind prep tables and grill/fryer with food residue. No place for soiled or wet mops to hang and air dry.

No consumer advisory on menu for oysters offered raw and ceviche (raw fish). Potentially hazardous foods prepared on-site — refried beans, flan tamales, menudo — and held over 24 hours must be labeled with day of preparation and day to be used or discarded by, which is seven days. Pork prepared July 29 stored in glass front cooler past seven-day use or discard by date. Cook with gloves took raw chicken out of container to put on grill and then with same gloves reached into container of cooked pork to portion out some for grill.
