Ceiling tiles in dish room damaged, moldy and some have been replaced with incorrect type. Replace all damaged ceiling tiles and replace incorrect type with correct type.

Sanitized cloth removed from sanitizer and used to wipe edge of plate with plated food. Cooks handle many different food items with same gloves as well as take cleaning cloths out of sanitizer, use cloths and then continue with food handling wearing the same gloves. Recycle grease containers have grease dripped down fronts and accumulating on ground in front of them.

Coffee in open styrofoam cups on prep table and top of sandwich unit in kitchen. Hamburgers, cheeseburgers and chicken sandwiches being hot-held for loading on mobile unit at lunch run hot holding at 82-105 degrees. Potentially hazardous foods to be held hot for service must be held at 135 degrees or above. Many open packages of luncheon meat without date of opening labeled. Once commercially packaged product is opened there is a seven-day use or discard by date required.
