Employee drinks in bottles on prep table with food. No hand towels at bar hand sink. Pork, sausage, cheese uncovered in reach-in cooler. No sanitizer in restaurant. Food splatters in microwave. Reach-in cooler not holding temperature. Hot held foods below minimum temperature. No date-marking system in place. Spray bottles without labels. No thermometer for employees to check food temperatures. Employee working with food without hair restraint. Dirty pans, knives in vegetable sink. Foil on several surfaces. Some sinks no longer attached to walls. No test strips in restaurant. Dumpster and grease container open. Garbage, trash in Dumpster enclosure. Cove loose in several areas, missing entirely behind cook line. Ants crawling all over floor and wall by three-compartment sink.

Approximately 100 pounds of raw chicken on counters, shelves, etc., temperatures range from 61 F-74 F; lo mein on bottom shelf at 79 F; dim sum being prepped by wait staff on counter 65 F-78 F. Make-line cooler no longer able to maintain required temperature. Handles of scoops in rice, flour and sugar down in product. Gaskets on make lines, walk-ins and reach-in coolers need replacement.

No sanitizer test strips available for monitoring sanitizer level of low temperature dish machine sanitizer cycle. Need to have chlorine test strips available for this use.
