Foods stored in walk-in cooler and freezer and make-line cooler not covered. Employee placing lo mein noodles in three dirty bus pans. Cold held items and salads on buffet all out of temperature due to ice bath not contacting containers. Some hot held foods on buffet not at required temperature. Bus pans of shrimp and tilapia thawing in cooler in water at 75 F. Cleaning cloths on equipment on tables. Gaskets on make lines, walk-ins and reach-in coolers need replacement. Grease from Dumpsters and grease container has run downhill into parking lot and then into adjacent hotel lot. Tile floors throughout kitchen are no longer sealed; grout missing, leaving deep gaps at the joints where water, food, etc., accumulates.
